
Selles on Cher - AOC
Origin
: Sologne this cheese, in the shape of a small puck,
ashy with the charcoal powder, is manufactured with the
unskimmed milk of goat. Its light odor and its melting flavour
are with the image of its soil where reigns the softness
of living: that of the meadows of the woodlands of the south
of the Loire. Its paste is white, immaculate, fine and firm.
This cheese belongs to the category of goat's milk cheeses.
It is presented in a cylindrical form, and is covered with
charcoal powder. It comes from Sologne and the departments
of Cher, Indre and Loir-and-Cher. Initially it was a home-
made cheese and intended for family consumption. It made
it possible to use the milk of the some goats raised within
the farm. Its production developed at the 19th century.
Its name comes from the city of Selles-on-cher, which became
the center of its production. The term "Selles"
also applies to goat's milk cheeses of the area which are
characterized by the distinctive shape of a disc. The label
of origin dates to April 21 1975.The cheese is obtained
by lactic coagulation thanks to the addition of a little
pressure. Its duration of refining is at least 10 days.The
area of Sologne from which it comes has special ecological
and climatic characteristics giving to milk goats a very
particular flavour. The manufacture of cheese is a traditional
activity in this little privileged zone . Advised wine:
