TO OUR DAYS
The Museum of the Foie gras
is located at Souleilles, typical farm of the edges of Quercy,
between Lot and the Garonne. It is installed in the old barn
of the farm on the slopes of the commune of Frespech.
It is a unique achievement in France. It recalls the history
of the Foie gras: From Egyptians to the Romans, Jews of Bohemia
to the famous tables of the 19th century how was born this
dish of exception, becoming with the passing of the centuries
one of the most beautiful expressions of the gastronomy.
Souleilles is a farm of production where Yves and Genevieve
Boissière, raise and cook ducks gras.
Attached to this occitan country, they began again and developed
the traditional breeding led formerly by the grand father.
IThey cultivate the same knowledge there to make: that of
the stockbreeder who loves his animals and takes care of their
wellbeing.
To cook they drew from the family receipts of the grand' mothers

"the Museum is the testimony of our
past, and we continue, with our manner, to write the history
of duck and the foie gras, started a few tens of centuries
earlier. It is the fruit of successive innovations: the domestication
of the wild birds, salting, the confectionnary, then the arrival
of corn, canning, maintaining the conservation vacuum.
It is a part of our inheritance, just as our language the
occitan ".
